Cook seafood, meat, poultry, and vegetables like the Native Americans of the Pacific Northwest on this cedar grilling plank. The cedar wood imparts a subtle smoky-sweet flavour to foods as they slowly roast, retaining their moistness, and imparting a sweet, rich aroma. Baking on wood is a healthy, low fat way of cooking. The porous surface of the plank absorbs moisture at room temperature which transfers when cooking to give a moist, juicy, and flavourful result, without additional fat or oil. Care: Cleanup is easy with warm soapy water; wash and leave to dry. To dispose of a used plank, when cool, you can crumble onto charcoals for additional flavour for future barbeques or discard.
To use, submerge the plank in water for 30 minutes or more. Pre-heat the barbecue to a medium high heat (400 - 425°F). Place the soaked plank onto the grill and close the lid for a couple of minutes until the plank starts to smoke. Place the food on the plank, re-close the lid, and follow the temperature guide in the recipe. If a flame should occur, douse with water as needed or keep a spray bottle handy. Use the plank to serve your meal by placing it on a board or platter. It will be extremely hot, so use tongs, gloves or oven mitts to remove from heat.
